This dish is great for either breakfast (reminds me of porridge), healthy dessert (could be eaten with a small dollop of cream) or post workout. It contains a great mix of protein, carbs & healthy fats and is so easy to make. Got to love a slow cooker!
Ingredients
1 cup quinoa
3/4 cup coconut or almond milk
1 cup water
1 1/2 medium bananas (ripe & mashed)
2 tablespoons chopped walnuts
1 1/2 tablespoons butter
1 1/2 tablespoons cinnamon
2 teaspoons stevia or natvia
1 teaspoon vanilla essence
Combine all ingredients and cook on low for about 4 hours. Add more liquid if required.
